Buffalo Chicken Dip

One of my biggest guilty pleasures is buffalo chicken anything.  It's my crack.  I like to call this recipe my "crack dip."  When my little family first moved to the Boston area we were invited to a get together.  Can anyone guess what app was served?  You guess right...Buffalo Chicken Dip!  I have never had buffalo anything until that moment.  The moment that changed my life.  I would love to say it is an exaggeration,  but I am really that food obsessed.

The recipe is so simple I remembered it weeks after it was told to me.  I will often bring this dish to potluck events, and everyone loves it.  If the dish is too spicy for you I recommend decreasing the amount of Frank's Red Hot.  You will still get all the yummy flavors with less heat.



Ingredients:
  • 16 oz. cream cheese, room temperature
  • 1 bottle ranch (Feel free to substitute blue cheese dressing.  I like Ranch better)
  • 1 bottle Frank's Red Hot (Whatever you do DON'T substitute)
  • 1 whole rotisserie chicken, skin and bones removed (meat shredded with hands)
  • 2 cups sharp cheddar cheese
Directions:
  1. Preheat oven to 350 degrees
  2. Add cream cheese to large baking pan, breaking up with a fork (I recommend 9x13)
  3. Mix Frank's, ranch, chicken, and most of the cheddar with the cream cheese until smooth.  I recommend sprinkling some of the cheddar on top.
  4. Bake for 20 minutes.
  5. Add remaining cheddar on top, and bake for an additional 5 minutes.  Sometimes I like to use Mexican cheese for this step.
  6. Serve with celery, carrots, chips, pretzels, or whatever you want!

Miso Ginger Salmon

One of my favorite recipes I make is my Miso Salmon.  The sweet and salty glaze over the salmon is divine.  The best part of it all?  It only takes 10 minutes to cook!




Ingredients:
  • 3 or 4 salmon filets
  • 3 tablespoons miso
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 2 tablespoons hot water
  • 1 tablespoon fresh, grated ginger
  • 1/4 cup brown sugar, packed
  • 2 tablespoons chopped green onions
Tip: place ginger in freezer for 10-15 minutes before grating 

Directions:
  1. Preheat broiler
  2. Spray shallow baking dish with cooking spray
  3. Whisk the miso, soy sauce, mirin, hot water, ginger, and brown sugar in a small bowl
  4. Place salmon in baking dish
  5. Evenly spoon miso mixture over salmon
  6. Broil for 10 minutes, basting mixutre two or three times over salmon
  7. Place chopped green onions over salmon
  8. VOILA!

MyGlam Bag

     This month marks the start to my monthly beauty bag subscription, MyGlam.  I pay $10 a month to have 4-5 deluxe samples and full-size products sent to my door.  Every bag has a theme, and this month's was eco-friendly.  I'm not going to lie to you guys I kind of squealed when I opened my bag.  The only brand that would have made this perfect was Josie Maran, but that's for another post.

     The first item I grabbed was Wen.  We've all seen the infomercials on T.V.  Wen is formulated to cleanse, moisturize, and replenish your fabulous hair in one easy step.  It is sulfate-free and smells divine. Wen does not lather like regular shampoo because it isn't.  There is such a huge difference in Wen hair vs. shampooed hair.  Wen hair is tangle-free and full of body and shine.

     Now girlfriends, we all know we can not survive without concealer.  It is the one product that can make us look like we had a full night of sleep.  To be frank it is the one product that prevents people from saying, "You look tired!"  Am I the only one who wants to drop kick that person in the face?  I digress.  A full-size Sheer Cover concealer duo was in MyGlam bag with  impeccable timing.  I literally ran out of my go-to, Laura Mercier Secret Camouflage, the day MyGlam arrived.  The beauty gods were watching over me!  Sheer Cover's concealer is made from minerals and glides on like silk.  There are two shades in the concealer compact. One is perfect for under the eyes, and the other to cover blemishes and redness around the rest of your face.

     A giant full-sized product of Freeman's Cucumber Peel-Off Mask dominated my bag.  I love love love face masks..especially ones that peel off.  Obviously I love them for the clean feeling after taking it off.  That is a given.  The real reason I love peel off face masks is seeing all my dead skin come off.  Yes my pretties, you read that right.  I like to see that my skincare routine is working immediately....as in right now.

    The last item in my bag is another full-size product, theBalm's Hot Ticket nail polish in "I Take My Coffee Matte and Black."  I haven't used it yet but I plan on it in the next few days.  A girl can never have too many nail polishes!
