Friday Favorite: VitaCoco Goes Tropical

I am obsessed with the tropical flavored VitaCoco! I personally think coconut water is an acquired taste, but this stuff just tastes like juice. Guava is my most beloved juice in the world. As a pacific islander I grew up loving guava, so when I read the ingredients my taste buds did a back flip.

Whether you are a coconut water devotee, virgin, or still not sure I urge you to run to the store. Once you take a sip you'll be able to relax with the taste of the islands.

My Week In Pictures

I have been so busy that I haven't created any new recipes or tried any new products.  I have the next week off so you better believe I will be sharing more with you guys!

One of my favorite hobbies is gardening.  I was so excited to see ripe strawberries so early in the year!  There is really nothing like fresh produce from your garden.  I am also growing cabbage, tomatoes, peas, red pepper, green pepper, cabbage, basil, and rosemary.  


Clean Eating is one of my favorite all time magazines.  They always have great recipes for my family.  I found this Chicken Shepard's Pie with sweet potatoes in the latest issue.  I didn't have any marjoram so I subbed in some poultry seasoning I had left over from Thanksgiving.  I urge you guys to pick up the latest issue and give this recipe a try.


I decided to have an all out cheat day for Memorial Day weekend and splurge at Five Guys....


...and a martini at Yard House :)


I went to Nantasket Beach for the first time with one of my girlfriends to walk the boardwalk.  I love me some Cape Cod, but I think I just found a new beach.

Pesto Butter Salmon



I'm so sorry I've been M.I.A. lately.  I've had important matters to attend to, but know that I've missed my blog!

My favorite fish has to be salmon, and I love creating new recipes for it.  I decided to experiment in the kitchen and ended up with a delicious entree.

Ingredients:
  • 3-4 salmon fillets
  • 1/2 lemon
  • 3 tablespoons unsalted butter, melted
  • 6 tablespoons pesto
  • salt and pepper, to taste
  • parmesan cheese, freshly grated for garnish

Directions:
  1. Preheat oven to 425 degrees
  2. Spray baking dish with cooking spray
  3. Lightly salt and pepper the salmon
  4. Place in baking dish
  5. Squeeze juice from 1/2 lemon over salmon
  6. Mix together the melted butter and pesto in a small bowl
  7. Spoon the pesto butter mixture over salmon
  8. Bake for 10-15 minutes
  9. Freshly grate parmesan cheese on top
  10. ENJOY!

Baked Apples In The Microwave

May has finally arrived which means summer is right around the corner. It is time to get that summer body ready!

I started with a perfect breakfast to start the day with. I saw this recipe in "Clean Eating" magazine a while ago and decided to give it a go. It is fast, simple, and healthy! Best of all? It's delicious!

Combine 2 Tablespoon water, 1-2 teaspoon honey (depending on size of apple), 1/8-1/4 teaspoon cinnamon, and 1 apple, sliced.

Microwave for 2 minutes. Stir. Microwave for an additional minute. Top with Greek yogurt and you're done!

If you wanted to use this in a yogurt parfait it would be delicious too!
