Cool Ranch Chicken Flatbread

Back in my hometown of Olympia, WA I loved going to all the local pizza spots.  Oldschool Pizzeria and Vics had the best slices in town.  For my favorite pie, I hit up Brewery City Pizza for their Cool Ranch Chicken pizza.  I mean come on…ranch, bacon, and chicken topped off with lettuce and tomatoes.  Where can you go wrong?  Besides, everything is better with bacon.  Have you noticed this is my second recipe in a row with bacon?  I may or may not have been eating some everyday.  My son loves a slice for breakfast, and making just one doesn’t make sense so I make one for myself too.  You call it excuses I call it opportunity.

I have been missing home so much that I decided to recreate one of my favorite pizzas into a flatbread.  Now if I can figure out how to recreate Bonsai Wok Teriyaki’s salad dressing.  Oly friends know exactly what I’m talking about.

Ingredients:

  • 1 ball of pizza dough (I used store bought this time)
  • 2 tbsp olive oil
  • 2 strips bacon, cooked and crumbled
  • 1/3 cup ranch dressing
  • 1 cup cooked chicken breast, shredded
  • 1 cup shredded mozzarella/provolone blend
  • 1 cup lettuce, chopped
  • 1 tomato, chopped
Directions:
  1. Preheat oven to 425 degrees with baking sheet (I used the stoneware shown)
  2. Evenly roll dough into desired rectangular shape on a floured surface
  3. When oven is preheated, pull baking sheet out and place dough on it
  4. Pour ranch into the middle of the dough, evenly spreading to about 1/2″ away from the edges
  5. Sprinkle the bacon and chicken evenly on top of ranch dressing
  6. Evenly add cheese on top
  7. Brush oil around edges
  8. Bake for 10-15 minutes until crust is brown and cheese is bubbly
  9. Let cool for 2 minutes then slice
  10. Add lettuce and tomato to top of flatbread
  11. Enjoy!
The lettuce and tomato on top may make for a little mess, but it’s well worth it.  I think this would be a great app for Football Sundays or whenever friends come over.  If you wanted to make this a pizza you surely can.  A slight adjustment of the amount of ingredients, and you will be all set.
