Easy Paleo Chicken Salad from Sweetpea Lifestyle

We’ve all heard about paleo socially and on the interwebs.  Even though I could never have a strict paleo diet, I like to incorporate delicious recipes that are paleo friendly such as her chicken salad.  Seriously, how good does this salad look from Ashley from Sweetpea Lifestyle?  I mean mango chipotle, grapes, chicken, cucumbers are just asking to be eaten.  I know you are just going to adore Ashley like I do.

Sweetpea Lifestyle is one of my favorite blogs.  I need to find a reason to use Ashley’s Mason Jar Themed Shower ideas.  It’s absolutely brilliant!   She also has delicious recipes, great DIY ideas, and fun fashion boards.  A little something for everyone, right?!

This is a great go to meal for those busy evenings when you have exactly 20 minutes to make something healthy and satisfying before your h-anger (hungry + angry = h-angry. Thanks, SoMeCards!) gets out of control…

If you have chicken, greens and other salad accouterments in your fridge, you’re ready to go

Easy Paleo Chicken Salad
(This portion is for one, uno, single person… Adjust accordingly!)
3 oz Chicken Breast – sliced into strips
a sprinkle of Salt & Pepper
1.5 cups Romaince Lettuce
1/2 cup Broccoli Slaw mix
2 T chopped Cucumbers
2 T sliced Grapes 
1.5 T Mango Chipotle Dressing
Cracked Pepper on top
Marinate your chicken for 10 minutes, while you chop your greens, cucumbers and grapes.
Cook chicken over grill or in a hot pan till cooked through.
Let rest 5 minutes, before slicing into bite size pieces.
Mix romaine, slaw, and cucumbers in bowl + 1.5 T of the dressing. 
Top salad with warm chicken and cold grapes, followed by a few turns of your pepper mill.
I’m pretty picky about my salads – I like one of everything per bite. Therefore, I cut my chicken, grapes and cucumbers a bit smaller than normal… I don’t want a bite of JUST lettuce, or JUST chicken… I want the whole shebang! 
See how easy that was?? And.. it was ready in under 20 minutes. Eating Paleo – which is no gluten, no sugar, and no dairy – can be super yummy. I didn’t miss any of the no-no foods – didn’t even notice!
